“For this year’s Miami Spice menu at MaryGold’s I wanted to stay true to the Brasserie concept that everyone can find something that they like and come back again to try new dishes. We are always looking at local ingredients like Mahi Mahi and Florida inspirations like the Vaca Frita to keep us inspired. Using ripe summer tomatoes to make a bright ragout of for the impossibly soft ricotta pillow balances out the August Miami Spice entree selection. Don’t forget about Chef Leiti’s amazing pastries, the fondant with candied popcorn ice cream and her signature multi textured sorbets are the perfect balance.”— Brad Kilgore
